Thai-style sukiyaki, stir-fried rather than served as hotpot: glass noodles tossed with chicken, egg, napa cabbage and vegetables in a tangy, slightly sweet sukiyaki sauce with a hint of fermented bean curd and chili.
Pad sukiyaki is one of Thailand's favourite street-food noodle plates. Unlike the Japanese hotpot it borrows its name from, the Thai version is fired in a wok: springy glass noodles, chicken, egg and plenty of vegetables coated in a sauce that is tangy, garlicky and a little sweet.
It is lighter than a coconut curry but every bit as satisfying, and the sauce is distinctive enough that people who try it once tend to order it every visit. If you are new to Thai food beyond pad thai, this is the plate to graduate to.
The sauce is the heart of the dish — fermented bean curd, chili, garlic and a touch of vinegar and sugar, balanced so no single note dominates. We toss it through the noodles at the end so the glass noodles stay slippery and the vegetables keep their bite. Ask for extra chili if you like it sharper.
