Gai pad med mamuang — cashew chicken — is the dish we recommend to anyone easing into Thai food. Chicken is seared hard in the wok, then tossed with roasted cashews, sweet onion, peppers and a light sauce built on oyster and soy, with whole dried chilies for aroma rather than fire.
The result is crunchy, savoury and generously portioned, served with steamed jasmine rice. Families, hospital staff on a lunch break and anyone feeding fussy eaters order it constantly, and it reheats well if you take half of it home.
Cashews are toasted so they stay crunchy against the sauce, and the vegetables are added late so they keep some snap. Everything is cooked to order in a single wok, which takes minutes — ideal when you need a fast Thai lunch near the Health Sciences Centre.
