We season it with soy and fish sauce, finish it with green onion, and serve it with lime and cucumber on the side — squeeze the lime over the top before you start, the way it is eaten in Bangkok. Choose chicken, beef, pork, tofu or seafood.
High heat and constant motion are the whole trick: the rice fries rather than steams, the egg coats the grains, and nothing turns soggy. Because it is cooked per order, we can keep it vegetarian with tofu, add extra chili, or leave the fish sauce out on request.
