Slices of beef simmered until tender in coconut milk and red curry paste, with bamboo shoots, bell peppers and Thai basil. Rich, faintly sweet and properly warming — served with steamed jasmine rice.
Red curry gets its colour and depth from dried red chilies pounded with lemongrass, galangal, garlic and shrimp paste. Cooked down with coconut milk it becomes a rounded, glossy sauce that clings to beef and rice alike — spicier than our green curry for some palates, sweeter for others.
We simmer the beef gently so it stays tender, then finish the pot with bamboo shoots, peppers and torn Thai basil. On a January evening in Winnipeg there is very little that beats a bowl of red curry and a mound of jasmine rice.
The paste is fried in coconut cream until the oil separates and the aromatics wake up — that step is what separates a flat curry from a fragrant one. Only then does the beef go in. Tell us your heat preference when you order: we cook it medium by default and can take it up to Thai hot.
