A good spring roll is all about the wrapper: thin, blistered and audibly crisp, never greasy. Ours are filled with finely cut vegetables and glass noodles, rolled tight and dropped into hot oil only once you order, then drained properly so they stay crunchy all the way home.
They are the easiest thing on the menu to share, which is why they turn up on almost every group order we send to hospital staff rooms and West End house parties. The sweet chili sauce on the side is mild enough for kids and moreish enough for everyone else.
Spring rolls are the first thing to suffer if they are cooked ahead, so we do not do it. Yours go into the fryer when your order lands, come out golden, and get packed vented so steam does not soften the wrapper on the drive to Wolseley or Downtown Winnipeg.
